Looking for super easy Christmas recipes for a delicious 3-course meal on Christmas that the whole family can enjoy? We’re not all master chefs, and we don’t all have the patience to whip up something fancy. Fret not, A New Chapter in Life has you covered with some brilliant, super easy Christmas recipes.
Naturally, the proportions would depend on the size of your family. These recipes are for 2-3 people. If you will be preparing these dishes for more than 3 people, or all 3 are hungry hippos, then it would be wise to use double to triple the amounts. Of course, you would also need more pots, pans, containers and whatever else to cater for the increased amount of food prepared. Alrighty, let’s get right into the festive season…
Christmas Pea Soup
Ingredients:
- 1 1/2 cup (250g) split green peas (soaked overnight)
- 1 large carrot, finely chopped
- 1/2 onion, peeled and quartered
- 2 garlic cloves, finely chopped
- 7 cup of water
- 3 teaspoons chicken stock powder
- 3/4 cup of frozen peas
- bread for making croutons (entirely up to you)
- 1 tablespoon olive oil
- 1 tablespoon sesame oil or chili oil
- 1 teaspoon of chili powder
Instructions:
Combine the split peas, carrot, onion,
garlic, and water in a large saucepan/pot.
Bring to a boil and then turn down the heat. Let simmer, covered, for about one
hour. It is very important that the peas are soft.
After an hour of cooking, add the stock powder and chili powder and cook for
another 15 minutes to let the flavors absorb within the soup.
Add more water if the soup is too thick.
Add the frozen peas.
Cut the bread slices into small cubes. Place them in a bowl and mix with the oil.
Spread the cubes onto a baking tray and grill until they turn golden brown.
Serve the soup with the croutons on top.

Christmas Pizza #Priorities
Base Ingredients:
2 1/2 cups all-purpose flour OR bread flour
1/2 packet instant yeast
1 teaspoon sugar
1 teaspoon salt
2 tablespoons olive oil
3/4 cup of warm water
Optional: 1/2 cup of beer (Note: use only a half a cup of warm water)
Toppings:
1 packet tomato paste to spread over the base
1 pack of mushrooms (whatever kind you prefer)
1 garlic, thinly sliced
300g minced beef and 100g ham or bacon, roughly sliced
Vegan/vegetarian option: half onion (thinly sliced), half avocado (roughly sliced), half a green pepper (roughly sliced), some pineapple slices (if you’re crazy enough to like pineapple on pizza)
50-100g mozzarella cheese, grated
50-100g cheddar cheese, grated
Note: You could also use vegan cheese
Instructions:
Precook the mushrooms and meats with your favorite seasonings (we recommend using meat spice, garlic and chili flakes, and some Worcestershire sauce)
Combine 1 1/2 cup of flour, yeast, sugar, and salt in a suitable bowl.
Add olive oil and warm water and use a wooden spoon to stir well.
Gradually add another cup of flour. Add any additional flour as needed, stirring until the dough is forming into an elastic ball (it should not be breaking into sticky parts that don’t come off the sides of the bowl).
Drizzle some olive oil over a medium-large pizza pan before spreading the dough evenly over the pizza pan (1-2cm thick).
Preheat the oven to 210C. Allow the dough to rise for 30 minutes until the edges turn light brown.
Drizzle additional olive oil (about a Tablespoon) over the top of the pizza and use your pastry brush to brush the entire surface of the pizza (including the crust) with olive oil.
Remove from the oven, coat with the tomato paste, add the desired toppings, add the cheese, and bake in a 210C heated oven for 10 minutes or until toppings are golden brown. Serve with some Christmas joy!
Ever-so-light Christmas Eggnog
What’s Christmas without eggnog, right? We thought our super easy Christmas recipes list wouldn’t be complete without it.
Ingredients:
- 5 cups of full-fat milk
- 2 cloves
- 10 egg yolks
- 1 teaspoon of ground nutmeg
- 4 teaspoons vanilla extract
- 2 cups of sugar
- 2 teaspoons of ground cinnamon
- 1/2 cup of Kahlua
- Optional: 1 cup of whipped cream
Instructions:
Combine the full-fat milk, cloves, vanilla essence, and cinnamon in a pan, and heat over the lowest setting for 5-7 minutes. Bring the milk mixture to a boil.
In a suitable bowl, mix the egg yolks and sugar. Whisk together until they are fluffy before adding some hot milk mixture into the eggs. Pour the mixture into a pan and cook over medium heat while stirring constantly for 5 minutes (it should be thick). Strain to remove cloves, and let cool for about an hour. Note: Do not let it boil when stirring.
Stir in rum, cream, nutmeg, and add some cinnamon over the top. Remember to refrigerate overnight!
